Weird question here maybe, I know that charcoal does a great job of cleaning water, but does anyone know if it will desalinate water? Might be a valuable piece of information to know in a survival situation...

Nope. It doesn't clean water either. It can filter out or eliminate some chemicals (like chlorine).

unfortunately it will not. it does not bind with sodium very well.
simple stills using the sun can be the easiest method to desalinate and filter water other than that the usual method is reverse osmosis filtration.
