Crock Pot Spicy Black-Eyed Peas
« on: January 06, 2010, 09:54:42 PM »
I made this tonight and I really liked it.  I used all stuff I store except the bacon.  It is super cheap so I know this will be going in the rotation.

5 cups water
1 can veggie broth (any broth should do or you can even use another cup of water and a chicken bouillon cube)
1 pound black-eyed peas
6 slices bacon
1 tsp granulated onion
1/2 tsp granulated garlic
1/2 tsp taco seasoning
1/2 tsp cayenne powder
1 1/2 tsp cumin
1 tsp course ground pepper

1. Cook bacon most of the way.  Chop into chunks maybe 1/2"-3/4" long.
2. Rinse and sort black-eyed peas.
3. Mix all ingredients in crock.
3. Cook on low 6 to 8 hours until black-eyed peas are tender.

I had some of the pre-cooked bacon and used that right out of the fridge.  It wasn't spicy enough for me and I'll add more pepper, cayenne, and taco seasoning in the next batch.
Q: What was the most positive result of the "Cash for Clunkers" program?
A: It took 95% of the Obama bumper stickers off the road.

You're like some sort of gun slingin' Betty Crocker.  I still haven't had a chance to try the Hot Sauce recipe...  The Crock Pot was my favorite bachelor cooking method.  One can of beer, one cut of bargain meat, one can of veggies and one 8 hour shift later - at least is was a hot meal.  You've elevated the crock pot to a respectable cooking appliance, I bet this meal goes good on a cold day.
