Hot Sauce Recipe

Well, I just made some from my stores,  I'm going to reserve posting the amounts until it cools and I get a chance to taste it.  But one thing for sure it's hot.

4 TBS Ground Cayenne Pepper
1 TS Granulated Garlic  (going to change this to 1/2 TS)
1/2 TS Granulated Onion
1/2 TS Salt
1 TS Masa Flour
1/2 C White Vinegar  (going to use 1 C)
3/4 C Water  (I should be able to use 3/4 C and fill the container)

I mixed everything but the Masa Flour and heated it to a boil and simmered for a few minutes.  Then I mixed in the Masa Flour and blended it very well (whisk).  Mixing in the Masa Flour just causes the mix to thicken.  Then off the heat, let it cool down a bit, and then put in a recycled hot sauce bottle.

Whether this recipe works or not I'll eventually come up with one I like.  And save a bunch of money when I quit buying the expensive stuff.  ;)

Well, I couldn't wait so I gave it a try.  And:

1. It's much hotter than Cholula or the other one I use.  Wow!
2. There's a bit too much garlic.  I'll fix that in the next batch.
3. Simmering the vinegar weakened it a bit.  I'll use more in the next batch.
4. The masa flour did get it a little corn taste.  Not bad but definitely different that the others.  I tried the masa instead of using xanthan gum.

At this point I'm going to call it a success and edit the first post with the measurements.  I'll post the suggested changes based on the taste test.

I'll replace the cayenne with habanero.. I like my hot sauce very hot..  Looks like a good recipe though.  I've got this hot pepper I bought from the indian food store that blows my socks off.. Not sure the kind but it really goes good in any type of BBQ-style food.. Gives everything a nice zazz.

why not just add the habaneros to it?

Defiantly sounds like a good start!
I usually can't find anything hot enough for me, without sacrificing the flavor.
I just finished a bottle of Ghost Chili sauce, it was pretty good.
However just a small bottle was like 5 bucks, and only lasted a week or so.

I'll have to stop by next week, just for a taste  ;)
