has a ton of the Good Eats episodes without commercials.  Alton Brown not only tells you how to make it taste good, but the science of why it tastes good doing it that way.  Best cooking show, IMHO.

Best turkey I've ever cooked was from one of his shows. Soaked in a salt brine for 2 days before cooking. Wow! juiciest turkey in the world!
