I used something similar to that on some antelope.  Worked great.  Some of the backstrap does come off with the hide so you do have to get that back.

I have seen pretty much the same thing done using the rock and a slip knot . Put the rock under the hide , wrap the slip knot around the rock and then use a truck , 4-wheeler or whatever to pull the hide off .
